45 meatballs is about what 1 lb of ground meat makes if you use a 1TBS measure for each meatball. 1 pound of meat is usually enough for our family of six (depending on the meal), but when I made the Amish Meatballs, I used 2 meal-size portions (about 90 meatballs) and more than doubled the sauce, and we had 2-3 cups of leftover meatballs. Darcy, for your family I'd use 3 meal-size portions of meatballs and triple the sauce.
